The word rumal means handkerchief in Urdu and Hindi, and the name rumali roti means handkerchief bread. The extreme thinness of the bread and the fact that it is usually served folded like a handkerchief are the probable reasons behind the name.
The bread is usually made with a combination of whole and white wheat flours and best cooked in a tandoor.
At Maharaja’s Lakeside Indian Restaurant, we offer this exotic bread for you to enjoy with our mouth-watering curries. Watching Rumali Roti being prepared is great fun, enjoying it as part of your dinner is even better.
Tava is a heavy-based griddle used in Indian cooking and gives its name to a style of preparation which needs constant stirring and attention. All Tava cooking uses a base of onions, tomatoes, ginger and garlic, tempered with whole spices. In addition to the base, it takes sixteen different herbs and spices to create an authentic Tawa dish. These are cinnamon, black cardamom, cloves, bay leaves, peppercorns, star seeds, mace, green cardamom, nutmeg, mustard seeds, turmeric, chilli powder, royal cumin, dried ginger powder, dried mango powder and fenugreek leaves.
At Maharaja’s Lakeside Indian Restaurant, you can enjoy this unique style of cooking and discover a whole new flavour to Indian cuisine.
